Spring is finally here! It’s time to open the windows and let the warm breezes flow in along with the smell of fresh flowers. It’s also a good time to get outdoors and visit with friends and family.

Here are a few Spring menu ideas. If you are like me, I love to cook but don’t have time to spend all day in the kitchen. Using packaged mixes and marinades, all I have to do is add a few ingredients.

The Lighter Side – a menu for those of us who are eyeing our swinsuits and trying to control calories…Sweet & Spicy Pecan Salad, Sauteed Porcini Balsamic Vaegetables, Chicken Skewers with Raspberry Grilling Sauce, and Strawberry Sangria Trifle. Yum!

Now for some easy recipes:

Spinach Onion Dip – Mix 1/2tbsp spinach seasoning, 1-1/2tbsp onion & chives seasoning, 1/2c mayo, and 1/2c sour cream. Chill for 1 hour. Serve with fresh veggies.

Grilled Pineapple Dessert – Drain a 20oz can pineapple slices, reserving 1/3c juice and 6 pineapple rings. In microwave-safe dish, combine 1tbsp butter, 1/2tsp brown sugar, 1/4tsp vanilla, 1/8 tsp cinnamon, 1/8tsp nutmeg, and reserved pineapple juice. Microwave uncovered for 1-2 minutes or until bubbly. Brush 1/2 of mixture on both sides of pineapple rings. Grill pineapple, uncovered, over medium heat for 1-2 minutes or until golden brown, brushing occasionally with remaining pineapple juice mixture. Remove grilled rings to serving plates, top with scoop of vanilla ice cream, then drizzle with caramel sauce.
