Substitute flavoring for Rock Candy?

The recipe I have for rock candy calls for 1 teaspoon flavor (cinnamon) oil. I am not a fan of cinnamon and I cannot find any other flavor oils. Is there anything I can substitute into this recipe like Jell-O?
Please help, my son desperatly wants to make rock candy for his Grandma for Christmas!
I have NOT been able to find ANY flavor oils at Wal-Mart or any of the drug stores in our area.

Couldn’t you use extracts, such as a teaspoon of peppermint, or other flavors? I know extracts come in lemon, strawberry, coconut, and orange too.
